What's for dinner....Salmon Cakes with Tomato/Avocado Salad
Took a recipe from Blake's cookbook tonight and made some little salmon cakes based on how much he loved the salmon he ate last week. Blake liked them, but Jon LOVED them. I think he probably could eat a whole batch by himself. I'm not the biggest salmon fan, but I bought some really fresh organic fillets to use in this recipe and I think that it made a difference. My favorite part of this dinner was the delicious dressing on the Tomato salad...I pretty much ate the rest of it for lunch today...mmmmmmmmm
What's for dinner....Cuban Pork Tenderloin with Roasted Corn and Poblano Salad
Wanted to take advantage of the grill and the beautiful weather this weekend so broke out a new recipe. This is basically a take on a cuban sandwich - a pork tenderloin filled with mustard, swiss cheese, and pickles. Delicious! On the side I roasted some corn w/red and poblano peppers, avocado, and some black beans. The best part was that Blake loved this too...he scarfed down the pork and the beans in no time; needless to say we had a few toots on our hand after it, but will definitely be making this again.

What's for dinner....Corn Cakes with Smoked Salmon
I got a bunch of great corn recipes for August so was excited to try one of them last night. These corn cakes were delicious. And Blake absolutely LOVED the salmon...he devoured it. Sometimes he's such a weird guy....

What's for dinner....Zucchini and Carmelized Onion Quiche
Team Manbeef is trying to get back in shape, so we've started to put together a gym schedule. Jon's work out night is going to be Wednesday, so looking out for recipes that I can put together early in the day and then just throw in the oven while I watch the little man.
This was the first "Wednesday Night Meal"...I made a big pot of caramelized onions over the weekend, and then mixed them with some zucchini in a quick quiche. Made for some good breakfast leftovers through the week too.

What's for dinner....Korean Beef Noodles
Well lunch actually....had a nice "stay-cation" day at home with Jon so decided to make a yummy lunch while the little man was at school. Made a quick beef stir-fry bowl. Jon could eat about a pound of asian noodles if I let him so these are always a big hit. Think it could have used a bit more spice, but overall pretty satisfying.
Hershey Family Vacation!
Last week Jon, Blake and me experienced our first family vacation. We had to make some last minute plans and ended up going to Hershey, PA....and it was FANTASTIC. We stayed at the Hotel Hershey, which I've looked at before but never stayed at. I am so glad that we finally did though. There was so much to do right at the hotel and the staff was incredibly friendly. Blake had a blast smiling at every guest and every staff member and he LOVED running up and down the hallways every day.
I really had no idea there was so much to do in Hershey. We went to the park, visited the Gardens, went on the Trolley tour, and hung out at the hotel.....but we still only felt like we did less than half of what was available. We're already talking about planning another long weekend there next year.
Unfortunately, it's back to work today for both of us....so this is the perfect time to share some pictures and have fun remembering this great trip

Top Ten Favorite Things (Bday Edition!)
It's been a sad week at Casa de Boehmke, so I did not get to post a Top Ten list from last week. To make up for it I've put together a special Birthday Edition for this week with some great memories from yesterday and some great gifts from my friends and family. Enjoy!
